I don't know where you got that impression from at all. Eagle Claw Fist would probably the best "official" name there could be for it. Other than that claw pose is the best simple name.

mid-closed hand could be any number of things, and clawing hand seems to imply something is being clawed, rather than any kind of pose.

Should be. That's the name people are going to have to try to find it by and to use without accidentally mistagging it on the wrong images.

In absence of an official name, claw pose is growing on me.
