If we bring canon into it, she controls the dolls herself. So... well it seems she's insulting herself.

Having the dolls insult the puppeter is classical humor. I've seen it done at least since the black and white television days of the Ed Sullivan Show.

Or the dolls are a surrogate for Alice to project her subconscious mind that she's suppressing in her conscious state, and provide a conversation between her two segregated states of mind.

Alternately, Shanghai is playing a full-on Tyler Durden role, where Alice is starting to lose her distinction between fantasy and reality, and projecting her dissociated personality traits onto her dolls.
