But isn't Sakuya one of the few girls that occasionally sees a certain guy? I mean there's no way she has no experience interacting with guys.

A more pertinent question would be if they even like men.

Everyone except for Youmu deals with men on a regular basis.
Sakuya shops in the village.
Reisen sells medicine in the village.
Shou works in the temple very close to the village.

The only reason we the audience don't see any other prevailent male in the series that's not Rinnosuke is because "The male characters aren't as much fun to write as the female ones" as ZUN puts it. Rinnosuke's role in the Touhou story is to show the world from a more down to earth perspective. Since Rinnosuke doesn't have giant lasers for eyes or what other powers you could think of.

I thought he had the ability to recognize the name and the use of an item by simply looking at it. Not quite laser eyes or of the such but still somethin.

I guess "if they even like men" is the kind of question that you don't want to dig to much into it... I mean, it's totally up to your imagination, there will never be a absolute answer. So why don't just imagine up, and be happy with it...
