Almost never found secondo piatto to be all that delicious because the primo piatto is killing off the appetite already. No more room for another heavy meal like meat.

Hmmm... Mozzarella is a bit different from other cheese... perhaps I'm weird, but I eat it alone or in a salad.

As another famous Italian cheese, I'd go with parmigiano. It's rather common.

Poor Akizuki, she was too skinny. We should have known, she shouldn't have come!

Halfway through the meal, she sank. And they kept going, trying to feed her, and they were smacking her, "Whassa matta, you no like it?"

Casual meals are usually taken out one after another.
As for omitted courses, it depends. Sometime the meal consists only of primo, or only of secondo and contorno. Something that's often omitted is dolce, and you end the meal with fruit.

As an spanish, I can say it's the same here too. We've even got the "Vermout" that is kinda like an apethizer that it's consumed 2 or 3 hours before the main food.
