Now would anyone kindly tell me why Japanese for Turkey is "Seven-Faced Bird" presuming the kanji haven't deviated much from the Chinese meanings?

It's unsourced, but someone on wikipedia wrote that it has that "Seven-Faced Bird" name in Asia because of the male bird's ability to change its face depending on its mood. The colors on their heads apparently change based on their moods.

The Chinese and Koreans apparently also call it by a name that translates to "Seven-Faced Bird".

Mandarin Chinese has it as "Fire Chicken" (火鸡), so I have no idea where the seven faces thing comes from.
