When the big nevermore lands right in front of Pyrrha, you can see Penny's parts go flying off the screen, so she is probably somewhere on the side of the arena. I hope they show what happened to her later on, but if I were one of the students there I would have made sure she wasn't left behind.
Considering the circumstances everyone were in, I think they were just too focused on the Grimm and saving those that were still... y'know, alive, rather than picking Penny up.
It would be a rather intense twist if she is still conscious somehow and helps the teachers fight using her wires!

She wasn't damaged anywhere where one would think to look for a core so I think she will be able to get a new body. There is the possibility however that her memory was damaged. So maybe she'll come back and not remember Ruby, oh the feels...
