Until you finally win and celebrate and level up and buy/upgrade weapons and armour. Then go back to dying. Again.

Seriously, I went through Dark Souls 1 and 2 without ever upgrading my equipment. I had hundreds of hours in Monster Hunter my belt going into the series, so the combat was a joke.
Yes, you can, many enemies drop stones or slabs and some floor loot are upgrade materials. Did you not found the various blacksmiths on DaS1 or DaS2? Specially in DaS2 where there is one in the hub town.

Yes, and he was not hard. The only difficult thing about him was his random(?) fireball AoE attacks. Frankly, the most difficult thing in that DLC was from the curses and the 'enemy minion will revive until you disable the skeleton obelisk thing'

I've never played a Souls game but I somehow had a feeling the hours and hours of old school Monster Hunter in me would help immensely.

The real annoying thing about the Fume Knight, far as I am concerned, is the dodge timing to deal with him.
The only thing worse is the Smelter Demon, because of his AOE DOT field forcing me to back off and chug an Estus every so often. And like the Fume Knight he enforces good dodge timing skills.
