Not to mention fannon works overwhelmingly engulf the offical releases so much that there are Touhou "fans" that have never played the actual danmaku games or PC98 releases.

I've never played the games, but I still count myself as a huge Touhou fan. I just don't play games a lot. I do try to be keenly aware of what's officially canon and what's not, but I do tremendously enjoy the imaginative work of Touhou fans, including where they go way off canon, if it's done well.
Zun has never been pressured into anything. He does touhou for fun and no other reason. Some of the sideworks make little tip-of-the-hat references to fanmade stuff, but that's as deep as it goes. And the main games are indeed canon, really they're only things in touhou that're unarguably canon. I don't know why you'd think otherwise.

Yea I'd say it goes the other way and ZUN purposefully does thing against the fandom-interpretation. Such as Aya and Momiji not liking eachother and Kisume being a scary and crazy.
