He's much better liked for two main reasons.
He knows not to screw around in a fight, especially a fight where there is a decent chance he'll lose.
And he also isn't a dick for no other reason but to be a dick.

I already knew that.....my hate for the guy burns brightly even now....he wen't around from house to house raping any virgin in it....that alone earned him my hate for the rest of eternity

It's not, unfortunately. Gilgamesh cares nothing for the opinions of others. In his mind, anyone who favors his younger self over his older self is wrong and nothing will ever change that. The only person whose opinion matters to him is Enkidu, and the only reason he uses the youth potion is because he knows his younger self is more tolerant of modern-day humanity, whom he holds in contempt. He uses the youth potion because he knows otherwise he'd get sick and tired of modern humanity fast and wipe them out.
That said, I agree he is a horribly unlikeable character, which makes his inexplicable popularity (especially in Japan) that much more confusing to me (Nasu even admits Gilgamesh is his favorite male character in the franchise). It doesn't help that Nasu has slowly whitewashed him over the years (while also making him even more powerful), putting him in roles where he aids the protagonist to make him more likable (sometimes it feels like I'm one of the only people who remember this guy once said it should be a woman's privilege to be forced down and violated by him).
In Fate/Extra CCC, Fate/Grand Order, and even Fate/Strange Fake, he acts far more reasonably and is almost kind to the protagonists (well, kind for Gilgamesh). Heck, in Strange Fake he's almost fatherly towards his Master, Teene, who is an adorable little girl (though, to be fair, Enkidu was also summoned, so he's in a much better mood than usual, and Teene is very good at sucking up to him).

Honestly I always thought that the reason Enkidu even stuck around him was the off chance that his presence would wind up having his personality revert to that of his child self's....or at least something similar enough to it....poor guy was hoping for a miracle that would never come

I can respect your personal dislike of the character, but calling everyone who likes him as being inner psychopaths is just as dumb.
First thing first, this is a series where a serial murderers are portrayed as "lonely lolis" and "wannabe idol singers", etc. Even Gilles de Rais has his fans, and I don't see many people actually relating to an octopus man.
Not every character are enjoyed because they're relatable, and not every characters meant to be relatable are well written(ie. the plethora of Gary Stu harem leads these days).
So first, the very clearest thing here is in Fate(and fiction media in general), people(including authors) really are willing to like a character, despite of how heinous they are, solely based on looks.
And apart from his good design, Gil above all has his hammy personality, his position as the final boss, has great fight scenes and his immense strength. He's not some Joffrey Baratheon who thinks he's the best but actually can't get shit done, Gil is one of the few fictional characters with godlike ego who can back up all of his own words.
There are plenty of reasons to like him. If you personally disagree with them, your choice, but don't go calling everyone who likes a character must be secretly wanting to treat everyone around like dirt.
Amazingly, villains can be popular if they're written well as villains. I mean it's not like the Joker, Hal 9000, Hannibal Lector, or Count Dracula have massive popularity or anything for example.

You guys speak to the heart here. I decided to check the lightnovel after the Deen movie. He was the best part about the fate route, who Nasu admitted would have writen differently today. At first he apeared as the cock-blocking villain with a obsession with saber but little hints in his conversations gave him more deep than his generic hole portraied him. Talking about enjoy the modern age, that he gave immortality to a serpent and his disinterest with world domination got me curious about his true identity but his final confrontation with saber showed that he live to the title of king of heroes by enduring all of the world's evils without corruption a feat even saber couldn't acomplish.
Those with experience with Moon princess also have a better insight about his personality than most. As a demi-god he is human AND a divine spirit, being 2/3 god he is in inverse impulse all the time. His instinct led him to desire saber since she could be considered a 'treasure', it is nothing resembling the human understanding of love, he feels no joy even as enjoy all the world's pleasure. His final worlds are more in tune with his humanity as he admires the beauty that is beyond reach. As the "tip of the spear that ended the age of gods" is poetic how he was never free, we can fault him as much as shirou's distortion. He hate all the gods, including himself.
In a sense he is the first afirmation of humanity, "even if doomed to die their feats live on" as Noble Phantasms revered by those that come after. Considering his legend the GofB couldn't be more acurate.
