Funny, I find a lot of Japanese food to generally be "the only flavor you need is salt/sweet!" Okanomiyaki is basically 'let's load as much salty/umami flavor into one thing as possible. But then, I guess as an American, I don't like eating a lot of "typically American foods", either...
