Noodles (лапша) is not something unknown to russians. Chiken noodle soup (суп с лапшой) has been a staple food even at soviet times. Not as common as borscht or schi though.

Because this is on same tier of "soup with meat", but needs much less effort to make it (read less pre-cooking). Hence it's popularity as simple cheap/quick hot soup.
