The best is the wine you use for certain plates, the better will be the same plate. For example, the braised meat often requires Barolo or Cabernet, while to make a fine fish risotto you should use the Verduzzo.

I dont know much about Italian wines and their culinary uses. As far as Greek wines are go, Nemean wines ( red ) usually acompany (and are used in the preperation ) of red meat, white wine almost always acompanies white meat and some ( if not most ) fish and poultry ( although they're rarely used to prepare the aformentioned ),rosé is also a popular choice for preparing and acompanying some dishes.
Basically, it all boils down to the recipie and the grape variety : It is really easy to ruin meat and poultry by using ( and/or accompanying the final dish, of course )the wrong kind of wine or by using wine that tastes like vinegar...
Post Scriptum : Nemean wines are not the only red wines available in Greece.
