I'm actually just outside observer that happens to have Vtuber fanboy friend. As for contents. they may vary widely sometimes even within a group, from the standard gaming, reviews of various things, current trends, ASMR, musics, drawings, lessons etc. There's fandom wikia for that, but I'm not sure if it's kept up to date.

That explains why they always have so many staffs to upload, guess even one vtuber can occupy all my free time.

The auto-translater tries, but really isn't too accurate.
If you're looking for English subs there are some channels like HimeHina that tend to have their videos subbed by fans, and some channels and Twitter accounts that sub video clips.
Otherwise you can try just jumping into it raw and try to follow along. Sometimes there are English commenters that explain what's going on.
