I'm rather new to the whole vtuber scene so there are many of them I haven't had chance to check out yet. My first was Korone starting by watching her Doom 64 playthrough and from there I have been looking into a few others when I have time, like Okayu and Pekora.
Recently started watching a bit of Fubuki's videos and I've seen two running jokes which I guess are memes among her fans like Korone's infamous X-Potato.
Seems to be something about Fubuki's fans calling her a foxcat or something and her saying she is no one's waifu and friend zoning them.
Could someone help inform a newbie initiate please?

Fubuki is a fox, but is commonly misidentified, both accidentally and intentionally, as other animals. It doesn't help that she acts like a cat pretty regularly. There's no other special context to it, it's just become a running joke to refer to her as a cat to provoke a comedic reaction out of her.
Like a lot of vtubers, she gets proposals from fans, and she always responds with, "We're just friends!" leading to the joke that she's friendzoned her entire fanbase. She later explained that she refuses them because she would stab them if they cheated on her.

I'm pretty new too but I've also been enjoying much of the other girls via clips. There are many other hilarious streams but of course it's impossible to watch them all, especially when they might need translation so you can just search for maybe highlights, many which are already posted and are pretty great.
There's alot that Hololive has to offer and it'll take too long to list them all. It's best to just dive right in the rabbit hole and just have fun. I don't think there's any people in Holo that don't have at least one moment that will make you laugh or cry (or cower in fear). And yes, it is crazy, but I believe that Hololive are supposed to be idols...I think.

Thanks for the recommendations and thank you blindVigil for the Fubuki info. I really do intend to let myself fall deeper into the Holohole and start trying out more of the vtuber talents but lack of time with work makes it rather difficult.
I remember a few years ago when vtubers started appearing and was thinking this was just a passing fad and would be forgotten in a year tops. Though I did watch the odd videos of Mirai Akari and Nekomiya Hinata. When I started hearing about Hololive as a vtuber idol group I was kind of dubious about it as I have heard all the stories about the troubles both inside and outside any idol group over the years.
Then one fateful weekend I was browsing for some game playthroughs I could have playing in the background while I focused on other stuff. It was then I found a recommendation for Korone playing Doom 64 and simply thought "Eh, why not?".
Without even realising I forgot all the other crap I was going to do and just watched the whole video and had a huge stupid grin on my face. And with that I quickly set about watching more and getting more acquainted with Korone.
Slowly I have been looking to try out other vtubers when I have time but there are just so many it is hard to find the next one to start on. Admittedly I wasn't fond of Pekora or even Okayu at first, Pekora seemed a bit annoying and that laugh and I wasn't sure with Okayu's deeper voice after being so used to Korone's.
I stuck with it and gave it time and sure enough they both grew on me. Always a delight watching Okayu troll the other girls or have them swoon over her and her trolling of Pekora is priceless.
The fan subbers of these video are unsung heroes not just translating but also tossing in their own little bits that make these clips that much funnier. Such as the *bruh* in Korone's bowling.
