It mostly depends on your manpower and technology.

A lone company of ship builders using modern methods could probably produce a large galleon or ship-of-the-line in about 2 years, while an entire naval arm with thousands of ship techs working on a single ship and using prefabricated lumber could probably put a medium galleon together in just two days. That's also factoring out commissioning and designing the thing, which can take a whole extra year each at best.

Building a missile submarine or a modern battleship with steel armor takes much, much longer. The USS Iowa probably took over 4 years from blueprints to launch. The loss of a Typhoon-Class (replica) would be a far greater loss than an antique first-rate warship (replica) in terms of time and money.

Seeing both wreck at the same time would be a spectacularly awful sight though.
