What is Baobhan Sith's character archetype in fan works anyway? I thought she was supposed to be a sadist, but honestly most of the depictions I've seen are, for a lack of a better word, bratty.

Its because she tries to be a sadist, not because she is an actual sadist, but because she thinks thats what her adopted mother, Morgan, wants from her.
Sith was originally so kind that the other fey exploited and even killed her repeatedly for sport (fey being to be reborn after dying many, many times). Sith had been killed so often she was on her last life (unbeknownst to her) and Morgan (who had adopted Sith by this time and knew Sith was on her last life) told her that to survive, she had to be cruel, which Sith interpreted as being actively malicious to others.
Now that Sith lives in Chaldea, she no longer needs to be cruel to survive, but bad habits are hard to break. That said, her canon personality is more haughty and condescending than bratty persay, though she does have a penchant for mean-spirited pranks.
In her Valentines scene, she gives the Master a chocolate stake that is cursed to destroy all other chocolates he/she receives from the others, but her prank backfires because either the Master received her chocolate first and ate it before receiving any others or because the Master received it last, after having sampled everyone else's chocolates.
Fanon likes interpreting her as sort of a less chuuni, more tsundere version of Jalter, when they focus on romance, and as an arrogant rich girl brat whose pranks and harsh words often backfire when focused on comedy.
