Raiders Of The Lost Ark, the Cairo Swordsman scene. The main reason for the scene, was because Harrison Ford had Dysentry (SP?) at the time of filming the scene, which originally called for a long, drawn-out fight sequence. Ford, exhausted and sick after a day's shooting, just went "Fuck it", and shot him. They kept it in, because A) It was funny, and B) It was ENTIRELY within Indy's character to do something so pragmatic.

Props also goes to the stuntman playing the swordsman adlibbing the kill too. since I don't think anyone was actually expecting Ford to do that.
