only way i can think of playing with a wii would be tilt left/right to move left/right or use D-pad/anolog to move, lean forward/back to move up/down, A to shoot, 1 or 2 to bomb, hold b/z(if nunchuking) for focus shot/bomb/moving.

If you take out the motion controls as described in your post, then put in this control scheme:
Wiimote controls Y-axis (vertical) motion by tilting it back and forth, possibly with an accessory like the one in-picture, and balance board controls X- and Z-axis (horizontal) motion.
Then it would be very possible to use this to produce a 3D danmaku shooter, with the capacity to avoid even more complex and spectacular patterns than before.
I wrote an small article about using a balance board for tasks like targeting and moving/straffing. Its possible but the BB has too much jitter, and to filter it introduced a reasonable delay.

And, for added kicks, to bomb, you could have the option of yelling "Spellcard". Knowing them, they'd try and include everything they could.
