A commemorative day established on this date by the Strawberry Daifuku Research Group at the University of Waseda because of the pun with "good strawberry"!

I don't know what's more confusing. That there's a commemorative day established by a research group, that there's a research group about the strawberry daifuku, that an university would support such a group, or that it's motivated by a pun.

In this case, it's not actually a research group, but a university club. The students named themselves a "research group," but it's essentially just a group of students who like strawberry daifuku and do various stuff related to it.
This kind of naming is common among Japanese high school and university clubs.

Oh, so kinda like the Lay Institute On Technology, an association counting two members and is used by scammers to buff their resume. Except less criminal and a lot cuter.

The pun is the reason why it's been set to this specific day. An awful lot of Japanese commemorative days are established on a particular day because of a (usually fairly contrived) pun.

You uncouth barbarian! You only say this because your measure of wordplay is found lacking.
Puns are the spice of life.

Seems like Reimu would like it because of the color. Goes well with tea.

    The pun: Good strawberry → yoi ichigo → yo (i) ichi go → yo(4) ichi(1) go(5)
