I mean, sometimes people just write characters as nonbinary or lesbians because it's interesting, rather than because they've investigated them and come to the conclusion that there's no other possible read.
It's also a bit of a joke because "Anby" sounds like "enby" which is slang for non-binary.

Why would the canon origin of her name matter here? They sound alike and someone pointed out the connection. That's how puns work. No one is seriously arguing the developers had the word "enby" in mind when they named her.
