I'd be hard-pressed to find diamond that close to the surface. I wouldn't be without joy, though.

You can get dirt that low, but it would have to be done intentionally. Maybe she's running a mod to change the chunk height to 16?

Pretty easy. All you need is dirt, light, and enough space to accomodate the trunk part of the tree. Just...don't set it up near a lava pool. That tends to end a bit badly in my experience.

I don't know about lava though.

I think I've found dirt underground before, usually close to lava or water.

Even if you don't find it, you can always just place it there. That's what I did when I did the 404 challenge. And lava will set flammable stuff on fire if it's in close proximity. Without warning.
