They're putting in meat before vegetables. Nabe protocol, IIRC, recommends veg first.

Pork slices. They're a must-have for nabe.

The reason we put veggies into the pot before meat is to let the veggies sweeten the soup first. Putting meat in first just turns the clear soup very cloudy and not sweet such heresy.
