What should I put for a word/phrase I am unsure of? Do I enter it in romaji, use my best guess and mark it with an asterisk, or something else?

If you're very unsure, just don't leave a note for that word bubble at all and tag the image partially_translated. If you're only somewhat unsure, use your best guess and tag the image check_translation, then post about the uncertainty in the comments.
Also, for lines like "Yukari-sama, [you're] winning a bit too much. {Please} let Chen win a little."), under no circumstances is there any need for uncertainty. The 'you're' and 'Please' are implied, even if there's not a one-to-one correspondence between English and Japanese words.
