I was trying to find the tag for the peace sign we often see people make with their hands and wasn't able to come across it until Feka mentioned it. I tried searching for peace, victory and _sign but came up with nothing.

Even though it does make sense, having a one letter tag might be a tad confusing and unintuitive considering most tags are meant to describe what they represent.

Would it be possible for it to be changed to v_sign or peace_sign?

There's been already a discussion about this and the conclusion was to leave it as it is. The point is that v has different meanings, from a simple "2" to "peace" and "victory".

I support Kumarei about this:
*peace_sign -> v
*v_sign -> v

Maybe it would also be a good idea to extend the wiki.

Indeed, aliasing it to peace_sign makes absolutely no sense on a Japanese art-oriented site, as that meaning is completely absent from the Japanese interpretation of the gesture. It's simply a visual equivalent of "yo!", something you make for pictures, nothing else. Calling it a peace sign would be a huge factual error.

Yeah let's just leave it 'v'. I will alias peace_sign and v_sign to it though. Because for an image where someone is really giving a peace sign, it'd be mostly indistinguishable from our 'v' tag and would fall under it anyway.

I guess aliasing it would be the best option.
Also wrote a few things that were mentioned in this thread to the wiki for v and peace_symbol.
