santoku knife

A Japanese kitchen knife with a straight edge and a curved back.

It designed to handle a variety of ingredients and able tо chop, slice and dice. In comparison to a chef's knife, a santoku is usually shorter, thinner, doesn't have a bolster and is limited in rocking motion cutting due to less pronounced cutting edge curvature.
